WHere is a simplified version of a cocktail found on a new drinks list. It's a batch prepared mix that is bursting with the tastes associated with festive period, rendering it excellent for your holiday party. Reserve the remaining cordial to use in brunch beverages, sweets, or to mix more rounds of the drink.
The Bikini Cocktail
Yields 10 guests
Ingredients for the Citrus Syrup (makes 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
For the Premix (produces 850ml, to serve 10)
400ml premium vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine syrup (from the recipe above)
Whole cranberries, to garnish
Mandarin essential oil, as a final touch
Method
Making the Cordial: Place all the items in a saucepan, heat until it reaches a simmer, agitating until the sugar dissolves. Next, turn off the heat allowing it to cool fully. Pour into a sealable bottle, seal keeping it in the fridge, where it will keep for about a month.
Preparing the Premix: Combine all the liquid ingredients in a sizeable container, leave to sit for one hour, then pass it through best through cheesecloth, so it's perfectly clear.
When ready to serve: Measure 85ml of your cocktail base to a mixing glass packed with ice, and stir lightly for about 60 seconds to cool it down. Filter into an chilled martini glass or a similar vessel, top with some cranberries and complete it with a light spray of the essential oil over the top.
